Dandelion Greens in Olive Oil (Hindbeh bi-zayt)

• 1 tablespoon vegetable  oil

• 2 onions sliced into rings

• 2 garlic cloves

• 1 bunch dandelion greens (Hindbeh)
• 1 teaspoon salt
• 1 tablespoon fresh lemon juice
• Lemon cut into slices

1- Prepare the dandelion greens: Wash, clean and chop the dandelion greens. Put in boiling water for almost 10 min.
Drain and squeeze excess water.
2- Heat oil and brown the onions (approx. 10 min).
Remove to absorbent paper to drain.
3- Fry the pressed garlic in the same recipient for one minute.
Add the boiled dandelion greens and mix for 3 min
Sprinkle the salt and the lemon juice

Serve in a dish and garnish with the browned onions and slices of lemon.
